Is your goal to get an associates degree that will allow you to get a job? If so, look for something that involves practical real world training. The ones you mentioned are good. If your goal is to go for a bachelor's degree, then you need to find a field that interests you.
One other note: anything in the medical field is going to see a lot of growth and stability over the next 20 years - especially if it involves working with the elderly.

I feel it is a wonderful healer, but sadly, there is a lot of misinformation about it. Medical marijuana is not as simple as 'smoking a joint', it's a far more sophisticated drug. In Nimbin, northern New South Wales, Australia, there is a wonderful man risking his own freedom to make medical marijuana for patients whose lives are transformed by it. In the extraction process, he removes 95% of THC, the psychoactive component of the drug, and produces a high quality product that is extraordinarily effective where traditional medicine has failed. I wish you well with your own quest; if you are in serious agony, I do hope you will work out how best to obtain the medication you need and deserve.

It depends upon what you like to do best, and if money is the deciding factor for you. Legal secretaries make good money, but so do career Executive Secretaries. I know that of the three careers, medical secretaries make the least.

Legal - Employment for paralegals and legal assistants is projected to grow much faster than average for all occupations through 2014. Employers are trying to reduce costs and increase the availability and efficiency of legal services by hiring paralegals to perform tasks formerly carried out by lawyers. Besides new jobs created by employment growth, additional job openings will arise as people leave the occupation. Despite projections of rapid employment growth, competition for jobs should continue as many people seek to go into this profession; however, experienced, formally trained paralegals should have the best employment opportunities.
Secretary - Overall employment of secretaries and administrative assistants is expected to grow more slowly than average for all occupations over the 2004-14 period. In addition to those resulting from growth, numerous job openings will result from the need to replace workers who transfer to other occupations or leave this very large occupation for other reasons each year. Opportunities should be best for applicants with extensive knowledge of software applications, particularly experienced secretaries and administrative assistants.
Projected employment of secretaries and administrative assistants varies by occupational specialty. Employment growth in the health care and social assistance and legal services industries should lead to average growth for medical and legal secretaries. Employment of executive secretaries and administrative assistants is projected to grow average for all occupations. Growing industries—such as administrative and support services; health care and social assistance; educational services (private); and professional, scientific, and technical services—will continue to generate most new job opportunities. A decline in employment is expected for secretaries, except legal, medical, or executive; they account for about 47 percent of all secretaries and administrative assistants.

Legal always a good way to go. Office admin ok but I think you need more experience than 'degree' to get a job

That depends on what you're interested in, what job opportunities are available where you choose to live, and what schools are offering in your area. Nothing makes any one of those careers "better" than the others, in general. One of them may be better for YOU, but we can't answer that question for you.
