It started with the domestication of dogs in the time of Neanderthals. They fed the dogs parts of their fresh kills, and the dogs stayed acting as an alarm when there was an intruder or other animal about, especially at night.
They became the best friends of the cavemen because of this symbiotic relationship.
Gerbils don't stay around humans willingly, don't eat fresh kill so wouldn't have that incentive to stay, and they don't make as good of an alarm. Plus dogs are more cuddly and affectionate.

Because gerbils collars aren't big enough to attach a bottle opener to and they won't come when you call them.
