It's called "customizing" sometimes spelled "kustomizing'. It individualizes the vehicle to reflect the owner's taste, sense of proportion and design. Some people just like to be different than everybody else. As for me, I prefer the "personal touch" which is why my PT Cruiser has a different grille and gas tank cover, all the emblems have been "shaved" and the stance modified. If I could afford it, it would be a whole different shade of red, since Candy Apple is my favorite (I had to settle for Inferno Red from the factory). I plan on adding a few other touches as I can afford to do so, including a louvered hood and '59 Cadillac-style bullet tail lights.

i think they want to feel unique, or sometimes for economic of performance reasons
