Depends on the herbs. Some like thyme, fennel, and rosemary tolerate things a little drier than stuff like parsley, basil, and cilantro.

Just make sure you plant them in soil that drains well and they are in full sun. I usually water mine every day during the heat of summer. In cooler weather, I can cut it down to 2 or 3 times a week.

I would go to a local nursery and ask them. Some herbs will grow in my area but not in yours all the time. They are resilient and bounce back in dry spells when watered.

You can usually tell if it is thirsty due to it shriveling up and looking limp. Not good for the root system either. Heavy mulching is a good thing. It holds in moisture longer and keeps the root system cooled down.

You must ask for expertise on herbs; reason being, they can be very invasive and take over everything and are hard to get rid of such as Lemon Balm, it smells and tastes great but you cannot get rid of it.

Try picking out thing that can be perhaps planted in a controlled environment like making squares with blocks to separate each pant in your garden. Give them plenty of room to spread but only enough to manage the feeding and watering.

If they get too big, give separated plants as gifts in a baskets to start their own garden, or make small pots to use like chives for everyday cooking or making herbal oils to cook with.
Dry some and hang for scents in your home & keep pests out, make soaps with dried herbs.
Do your homework and reep the rewards of all of the plants that will love you back for feeding them and keeping the roots moist.

Put your index finger into the soil and if you feel moisture they do not need watering! If they feel dry then water your herbs!

every other day. They will let you know when they want water if you don't, they will droop.
