The easiest way is to put the car on a lift and remove it fom the bottom,yes,I said the bottom.There is a cradle under there that can be unbolted that the engine is fastened to.It can be removed through the top but in the case of a v8 you will probably have to cut the radiator support.I know this is not what you want to hear because when I started this same project I didn't want to hear it either.Good luck.

I've done it both ways on a Z28 - top and bottom.
Coming OUT through the top is no problem. You don't have to cut anything. It's a real piece of cake.
Going IN through the top is a pain because when the engine is hanging, the chain it is hanging from will be hitting the cowl before the engine ever reaches the transmission. This doesn't make it impossible, but you will have to monkey with it for a bit to get it in position.
Coming OUT the bottom is time consuming. You will be taking a lot more stuff apart this way.
Going IN through the bottom is EXTREMELY easy if you took it out the bottom. Everything is already apart. If you took it out the top, I'd go back in from the top.

Get a Chilton or Haynes service manual from a parts store or Eautorepair.net online.
Rent an engine hoist, hydraulic jack and good jack stands, good tool set, drain pans, towels and rags and a bag or two of oil absorbent or kitty litter.
Read manual on the pages starting with "Engine Removal"
Take pictures of where everything goes and label wires, hoses , connections, etc...
Remove engine
Take more pictures of your success and grimy hands and clothes
Have a few beers with your buddies
Tell the neighbor it's only 3 o'clock in the morning--everyone should be up.
Read manual starting with the pages "Re-installing Engine"
Have a few beers with the last guy remaining
Install new or rebuilt engine
Return rental items
Have pictures developed
Apologize to neighbor--offer to replace their engine

There are 105 steps to remove the engine,it is quite the task,and many tools are needed.also you need to organize,take pictures,and place and label every nut and bolt,brackets,color mark hoses,wires, if you want to attempt it,go to Alldata.com,they will sell you the repair manual on disc.for your car,I think it cost 19 or 29 dollars. good luck.
