I've always been a fan of Quentin Tarintino's soundtracks. And I admire the soundtracks to Cold Mountain and O Brother Where Art Thou for opening me up to a style of music that had all but gone away in the modern world. But my favorite is the Devil's Rejects soundtrack. From classic rock to that funny bad country to one of the best blues cuts I've ever heard (Otis Rush's I Can't Quit You Baby) and the ever popular sound clips from the movie it's got it all.
And while it's not a complete soundtrack so much as peices of them, I must also reccomend "Music for a Darkened Theater", which is a compilation of all the best movie themes by Danny Elfman, from Beetlejuice to Darkman and Tales from the Crypt.

That's kind of tough. If it's an instrumental soundtrack only, the first movie that comes to mind is Star Wars. For a movie soundtrack with lyrics, my choice would be either Mary Poppins or Sound of Music.

I know I put down more than one pick, but I just felt like going with the trend.

I love Pirates of the Caribbean (the first one). My favorite track is 7. They've got the big booming drums going. It's the track that coincides with the Black Pearl chasing the Interceptor (is that the name of the ship William and Jack commandeered?)
I also really like the Lord of the Rings and Harry Potter soundtracks.
