Boil first, if you don't you risk losing the seal around the pasta. When you cook them, you cement the seal if you don't the freezing will warp the pasta and pull apart the seal. You can also steam them it adds less water to the pasta and less of a chance freezer burn.

you can freeze them right after you make them. if your filling is cooked just make sure it is not hot before you fill your ravioli or else it will spoil faster. most of the restaurants I've worked for makes fresh pasta then we freeze them with out cooking first. cooking or boiling time depends on how thick or how big your ravioli. the water has to be boiling and salted before cooking.

You can freeze them before cooking. Freeze on a flat pan first, then bag up with zipper bags. Freezing on a flat pan first helps keep the shape of the ravioli

freeze them uncooked in a single layer on a cookie sheet. then when they're frozen, put them in a freezer bag to save space in the freezer.
