Yes they can, but you can refuse and probably not be considered for the job. My DD-214 will be given with my resume because I am proud of my term of service, I have nothing to hide.

Are you sure your collage print the SSN on the official transcripts? In any case black out the SSN. A prospective employer is just that: a prospective employer and they have no reason to request the SSN. If you get hired then you provide it. Note: black it out before making the copy; any marker on the original can be removed by chemicals, also UV photography reveal what's under it.

Yes but never give a certified copy to anyone unless you know the reason they need it

Yes he can ask for the short copy. That is the one that has the bottom part missing or marked out. If you are trying to use veteran's preference, it is a requirement. Your refusal to produce it may or may not keep you from having a job.

Make sure you don't give them the whole thing. Your honorable discharge will suffice as well for Veteran Preference!

Yes they can. Not sure what the reason would be for one, other than checking if you're being honest and/or if they would like to see if your discharge was an HD/OHD/DD.....

Of course they can.

If you list your military experience on your resume or application, thats the only way they have to verify what you listed.
