I'd marinade over night in a bath of apple or pineapple juice or your favorite sweet cola. Then cover it with some BBQ seasoning...butter salt cinnamon sugar.
Now here are your options...put it in the oven at 400degrees for 45 to an hour then drop the temp to 250 for another hour & half to 2 hours
or you can put it on the grill smoking over apple wood for 6 hours
third option: go to www.foodtv.com put the search on recipies & type fresh pork & you'll have plenty options

Garlic Rice
INGREDIENTS
2 tablespoons vegetable oil
1 1/2 tablespoons chopped garlic
2 tablespoons ground pork
4 cups cooked white rice
1 1/2 teaspoons garlic salt
ground black pepper to taste
DIRECTIONS
Heat the oil in a large skillet over medium-high heat. When the oil is hot, add the garlic and ground pork. Cook and stir until the garlic is golden brown. This is the color you want for maximum flavor, do not allow it to burn, or the flavor will be bitter.
Stir in the cooked white rice, and season with garlic salt and pepper. Cook and stir until heated through and well blended, about 3 minutes. Serve and enjoy.

flour
vegetable oil
Salt and pepper both sides of pork slices.
Dredge in flour.
Fry in a small amount of oil until golden.
Its basically uncured bacon.

Well, I usually make bacon out of mine but, marinade it with carrots, onion, celery, bay leaf, thyme, a couple of cloves, garlic and black pepper, cover it in port wine and marinade for a few hours to overnight. Then you can slow roast it, 325F until it reaches 160F inside, or you can slow cook it with indirect heat on the grill. The apple wood for smoke was a GREAT suggestion, by the way.

Essentially this is the same "cut" as bacon, just not cured (salted and smoked.) Slice and fry it like bacon. Be sure and cut the "rind" off before cooking however or it will curl up. Good in a sandwich with bread, butter and a litttle mustard.

i boil mine first. hams are very salty. boiling it first helps to get rid of some of the salt. then i put it in the oven and bake it at 350 degrees for about two hrs. i don't use any seasoning. you can add a bay leaf if you like to the water. you can also put some pineapple slices on top of the ham when you get ready to bake it. i usually cover it with foil to keep it fro drying out while it bakes
