The Wiccan faith is supposed to be based on earlier faiths native to Europe. Those people lived off the land and sectioned off the year into quarters and eighths. These are the Sabbats and Esbats. This sectioning of the year came by knowledge of the movements of the stars, sun, and moon. Often priest also doubled as astronomers.

Not all of them do celebrate them all. It depends on the person. The most common reason to celebrate them is because they follow the changing of the seasons and it's good to recognize the work put into each season by the people and by deity/deities/nature who provides for them.
