Border collies are the smartest of all dogs. You might want to consider Canine Musical Freestyle. This is a fairly new competitive event where the owner choregraphs a dance routine to a song and dances with their dog. My local group performs a free show each May. This year we had over 500 in attendance.
There might be classes in your area, or you can learn dance routines from the Internet. Dogs can be taught figure eights, spins, backing around, jumping, and more. Check out the video clips on the link below.

I am teaching my Dane to "take a bow" and I have taught my pit mix to "show her butt". My Keeshond can dance and I am teaching my Chihuahua to dance and crawl. There is a great web site that has a lot of tricks for dogs. Type in dog tricks and you'll find some really neat ones.

My dog is half Border Collie, half Flat Coat Retreiver, and he swims underwater. if I throw a stone, he will swim all the way to the stone completely underwater, and bring back the very stone I threw for him. He also insists on having the empty packets, when we have biscuits, or sweets, he then tips the packet upside down to get the crumbs, he has worked out a system of doing this. He firstly flattens the packet with his paw, then he lifts the packet from the bottom, with his teeth, and shakes very gently, until the crumbs fall out. only when he's satisfied there are no more crumbs, does he rip the packet open to lick inside.

With my border collie we spent less time with tricks (other than the paw ones and basic ones) and more time with games. We taught her soccer, tether ball, and Frisbee tricks. Border Collie's are great at doing things with frisbees... like running up your back, leaping off and catching the frisbee you throw... there are actually competitions for this sort of thing.

That's a border collie!!!! They need to keep busy!! If you have the time, they are a great breed of dog to try agility with, fly ball, Frisbee!!!! If you ever get a chance to see any of these events, it would be worth while for you and the dog.

Teach her to open a door.
Get a guy border collie and teach them to slow dance with each other!!!! That would be CUTE!!!!!!!

A million things - but only room for one. Buy a hula hoop. Rest it on the ground and teach her to walk through it. Gradually (over days/weeks) increase the height so that instead of walking through it she has to jump through it. Once she is jumping through it happily, start to use your arms to 'surround' the hoop, just a little bit at first and gradually wrap your arms further and further around it. You should then be able to get rid of the hoop alltogether and have her jumping through your encircled arms!

I love it, keeping a BC's mind busy. I hear you.
I teach puppy obed. You can teach her to wave Bye-Bye.
Cut up a hotdog, let one piece be larger. Put one small piece in your hand and make a fist. She will smell it and try to get it out. Give her time and her paw will come up. Say "Wave Bye-Bye" over and over. When her paw comes up, let her eat the treat. Repeat the process again. She'll learn very fast to put her paw up and she gets the treat. It will get to the point when you only say "Wave Bye-Bye and her paw will come up and wave the air. Save the larger piece for last.
BC's learn very quickly so don't be surprised when she puts her paw up in a matter of minutes.
You can also play with the water hose. They love water and she'll either chase the water of jump for it. I have photo's of my BC's playing with the hose, they cause plenty of laughter.
