I would like to get the famous socratic quote tattooed on my lower back that says "hen oida hoti ouden oida", meaning "I know only that I know nothing". Is this this proper way to render it?

That's fine. Remember that translations express the meaning of the words; there is no such thing as a word for word translation from one language to another. For example, you could say: "All I know is that I don't know anything." This would be more modern English, but it's not as elegant as your translation. However, no one could argue with it, since it expresses the core meaning of the phrase.
