You've answered your own question! Cook on low for at least 1 1/2 hours to allow the meat to season the greens. Cook longer if necessary and season with salt, pepper, and a little red pepper flakes.

I would say you answered your own question in a way. I'd boil them until the meat came off the bones. Actually, I'd probably boil them first until the meat was coming off the bones, then boil the greens in the water and the meat after you removed the bones. Wouldn't over cook the greens that way.

I usually let them cook in a shallow amount of water with my onions and seasoning then add the greens later. I don't like to let it fall off the bone with necks because you tend to get little bone pieces with your greens. I personally use ham hocks in mine.

just throw then in till theys fallin apart. be sure to put a little olive oil and liquid smoke in there and a spoon of sugar
