heat your pan to screaming hot - add 1-2 tbsp. oil with high flash point like peanut or canola. season fish file ts to taste (i prefer kosher or sea salt, ground pepper and a little dried thyme) and pan fry to desired doneness. should only take a minute or two on each side. very hard to over or under cook tilapia, it is a very forgiving fish. you could also bread the filets with a seasoned egg wash & flour dredge, then pan fry.

BAKED TILAPIA 1/4 c. celery 1/4 c. onion, chopped 1/4 c. sweet red pepper, chopped 3 tbsp. butter 3 tbsp. flour Salt and pepper to taste 1/2 tsp. dried tarragon 1/2 tsp. dried basil 1 1/4 c. milk 1 c. Mozzarella cheese, shredded 1 1/2 lbs. Rain Forest Tilapia fillets In a medium skillet, saute the celery, onions and sweet red pepper in butter until tender. Add the salt, pepper, tarragon, basil and milk; mix well. Cook for 1 minute, stirring constantly until thickened. Add the cheese and stir until melted. Do not boil. Rinse the Tilapia fillets in cold water and drain thoroughly. Place the fish in a 12 x 8 x 2 inch baking dish; spoon the sauce evenly over the fish. Bake at 425 degrees for 8 to 10 minutes, or until the fish flakes evenly when tested with a fork. Serves 4.

Cook Tilapia in a fryingpan with moderate cooking oil, put in 3 cloves of smashed garlic, 1 stalk of green onion - cut up, Ginger slices (about 3 quarter coin size),1 oz. of Kikoman soy, 1 table spoon of sugar, and 2 oz. of white wine, and 2 Shitake Mushrooms. Let it cook for about 10-20 minutes (depending on the size of filet/fish) in high heat. Turn once during 1/2 of the cooking time. When the fish flakes off easily then it's done, but before taking it up, dash a little white pepper, and sesame oil.

Put a tiny bit of oil,in your frying pan; season fish with salt, pepper and any other spices you like (nothing too strong); fry on medium high for a couple minutes, turn over, fry until it flakes. It cooks quickly. Don't overcook it.

I dip the tilapia in ranch then coat it in crunched up corn flakes and fry it in olive oil for about 2 minutes on each side. This goes really well with rice pilaf.

dont frypan them, broil them. Broil with butter, dill weed, salt and pepper, serve with mango salsa.
