When asked "O genki desu ka?" is it correct to respond with simply "Hai, okagesamade". Some people have told me this is right, but this is how I translate it:

How are you doing?
Yes, thanks to you.

Can anyone explain this to me?

The first phrase isn't "How are you doing?" it's "Are you well?". In that context, saying "yes" or some variation makes more sense.

In my Japanese class we were taught the response was either "Hai" or "Genki desu." The last two Japanese people I asked simply replied "Genki"

'okagesamade genki desu' is correct as an ultra polite reply.

when someone ask u if u are fine, you do not say that u are not, not in japanese culture. u reply okagesamade genki genki just as a very polite reply to a greeting, nothing else, has no specific meanings. Ganbatte ne.
