This question is a little tricky to answer. Most will say Let it Be was recorded before Abbey Road, but Let it Be was released last. Abbey Road was released in September 1969 and Let it Be was released May 1970. That is basically true, however, overdubs on Let It Be continued until April 1970. The actual last session with the Beatles was on January 4, 1970 (actually, John was not present, he had pretty much quit at this point). This was for the Let It Be Album. Mostly, they overdubbed vocals and instruments to the songs originally recorded a year earlier during the Get Back sessions. However, one song was completely recorded in full. "I Me Mine" was recorded during the January 1970 sessions. The reason they recorded this song so late was because they had only ran through it briefly during the original Get Back sessions. This can be seen in the Let It Be film with John and Yoko dancing to it. They felt that since it was going to be shown in the film, they should record it for the album. Also of note, the song "Across the Universe" was not recorded at anytime during the Get Back/Let It Be Sessions. It was actually recorded in 1968 during the White Album sessions. But again, they were shown practicing it during the flim so they wanted it on the album. However, since it was John Lennon's song and he was not with them when the album was put together, they used the 1968 version. Phil Spector did add an orchestra and a choir to it, but that is another story. You may have heard the original that starts out with bird sounds. That is actually the same version that you hear on Let It Be, just mixed differently. A common myth is that there is two versions of the song "Let it Be". While there are two different mixes of the song with different lead guitars and various other differences, these mixes come from the same 8-track tape source. (Yes, the Beatles actually made it to 8-track by this point). They are just mixed different. So, technically, Let It Be was both the last Beatle album to be recorded and released. If you count the overdubs.

Let It Be was the next to last recorded, but the last to be released. Abbey Road was the last to be recorded, but the second to last to be released.
