I tried making homemade cherry ice cream this weekend, which fresh cherries. According to the recipe, I was to mix in a half pound of chopped fresh cherries into the ice cream at the end. However, when the cherries in the ice cream froze, they turned into little flavorless ice cubes, and ruined the consistency of the ice cream.

How do you make cherry ice cream with fresh cherries ?

You have to cook the cherries, and ad some sugar, or honey so they are sweet. Then you can mix them into the ice cream

Ingredients
1/2 gallon milk 8 eggs
4 tbsp cornstarch 2 cans pet milk
1 tbsp vanilla maraschino cherries or banana's to taste
1 cup sugar

Directions
In a separate bowl, beat the eggs well. Mix the cornstarch and sugar together. Add to the eggs a little at a time. Put aside.

In a heavy medium pan, scald the milk. Add the egg and sugar mixture slowly to the milk. Cook on a low fire until thick (has the texture of a creamy custard). Turn of the heat. Add the pet milk, vanilla and banana (the riper the better) or cherries or any other fruit choices. Follow the instructions per the ice cream machine.

You can add 1 cup of semi-sweet chocolate pieces in the last stage of cooking for a great chocolate flavored ice cream.

I made homemade ice cream this weekend too & made the custard kind this time. On your cherry ice cream when you have finished making it I would only put the cherries in each bowl of the guest you are serving. Then put your ice cream in the bowls & mix around. Homemade ice cream tends to melt quickly right after making & so this will help keep your cherries from freezing. I wouldn't put them in the entire ice cream because they will freeze & yes they leave an "ice" texture. Only put the cherries in when you are about to serve in the bowls. Cherry Ice cream recipe
3/4 cup dried cherries
1/2 cup rum
21/2 cups light cream
1/2 cup sugar
4 egg yolks
1/4 teaspoon vanilla

Place the cherries in a bowl and cover with rum. Allow to soak for several hours or overnight.

Heat the light cream and sugar together until the sugar is dissolved and bubbles begin to form around edge of the pot. Whisk yolks until creamy. Add 1/2 cup of the warm cream to the egg yolks. Pour the warmed yolks back into the half-and-half and continue to cook, stirring, until the custard mixture coats the back of a spoon. Do not boil the mixture or it will curdle. Stir in the vanilla, allow to cool completely, then chill.

Pour into the ice-cream maker and freeze according to manufacturer's directions. Drain the cherries. When the mixture begins to thicken as it freezes, add the cherries and freeze until ice cream is the proper
consistency.

Cherry Ice Cream:

10 min 10 min prep
1 gallon

2 (14 ounce) cans sweetened condensed milk
1 cup light brown sugar
2 (8 ounce) jars maraschino cherries, chopped, juice reserved
7 cups milk

1. With mixer, mix sweetened condensed milk and brown sugar.
2. Add maraschino cherries and reserved juice. Mix well. Pour into freezer can. Fill to the freezer fill line with milk - about 7 cups.
3. Stir well and freeze according to manufacture's directions.
