Not ONE country in latin America speaks latin. Spanish is the official language and spanish is a latin language so that's why the name.
Latin is a dead language and you can only listen to it at Mass services around the world, especially in Vatican City. Why are you learning a dead language anyway?

No, it's the root language of tons of the languages we use today, but noone uses Latin solely anymore it's a dying language. The Vatican still predominately uses English and Italian, Latin is used in relgious occasions/masses.

Latin was virtually prohibited in the Catholic Church after 1965 and the Vatican II. You won't hear much there, you probably won't hear much of anything except tourists. I imagine tourists outnumber residents by 10:1 and probably 100:1 in public areas at any one time.

Catholic Priests over 70 years of age may still speak Latin but their limited usage today would probably mean you can't speak much wth them.

"Mass services around the world, especially in Vatican City. "

Priests will be ex-communicated and many were in the 1960's for using Latin without approval from the Vatican, so I doubt you'll hear a mass in Latin there. there are a few that received the approval but I don't think you'll hear it at St. Peter's for the public - that is in Italian.
