I've heard "Peanut Oil" too.
My brother uses Peanut Oil in that BIG fryer he uses to deep-fry his Thanksgiving Turkey.

Peanut oil is best. It retains it's chemical structure better than others in high heats.

Canola is a little bit healthier, but the taste is NOT the same, and canola oil leaves a bitter taste the more it's used for frying.
