Cheese is one of my favorite foods. The following are appetizers that I enjoyed as a child (even now):
1. Cheese on crackers (cut the cheese into squares or there are packs of precut cheese in fun shapes like stars at the grocery store) or
2. Cheese and salami on crackers (at the grocery store you can get precut salami meat in a package in little circles so it fits on the cracker)
3. Quesadillas (cut into triangles)
4. Sandwiches (grilled cheese or cheese and some kind of meat such as turkey) cut into triangles or other shapes with a cookie cutter
5. Cubes of cheese with a toothpick in each one (depending on how old they are, toothpicks could be dangerous)
6. Nachos (not spicy cheese)
7. Mini bagel pizza bites (the frozen isle)
8. Nacho cheese dip (non spicy) and a tray of apples, celery, or carrots
9. Roll lunch meat an a slice of cheese together (like a burrito) and stick a toothpick into so that it stays
10. Corn-dog with cheese (frozen isle) and cut each dog into several pieces and serve with a toothpick

Mini Ham And Cheese Rolls

INGREDIENTS
2 tablespoons dried minced onion
1 tablespoon prepared mustard
2 tablespoons poppy seeds
1/2 cup butter, melted
24 dinner rolls
1/2 pound chopped ham
1/2 pound thinly sliced Swiss cheese

DIRECTIONS

Preheat oven to 325 degrees F (165 degrees C).
In a small mixing bowl, combine onion flakes, mustard, poppy seeds and margarine.

Split each dinner roll. Make a sandwich of the ham and cheese and the dinner rolls. Arrange the sandwiches on a baking sheet.

Drizzle the poppy seed mixture over the sandwiches.
Bake for 20 minutes, or until cheese has melted. Serve these sandwiches warm.

All the suggestions sound good. I do use a bit of american (but I get the deluxe ones which are a bit better), but I rip the singles in strips and put about 3 strips spaced apart on the bread. I then slice some cheddar or colby cheese and put on bread. That way it is real "melty" but also has better flavor and the texture of real cheese.

2. Add mozzarella on top
3. Put a small piece of pepperoni in the middle
4. Bake for 5-7 minutes in 350 C (put it on a aluminum foin before baking.)
