If you really want to know, curing in this sense actually means preserving. In old times, they had no refrigeration, so they had to preserve things by other means. Usually this was done with salt, but salt was hard to come by and expensive, so they came up with other means, such as smoking and sugar curing. sugar it self was hard to come by at times, so they developed honey curing.

'Cured' is a form of preservation - if the meat were not preserved in this way it would be referred to as pork.

BTW - There is no such beast as a 'ham' - a ham did not die. A pig did.
