Try something like a data-logger. Hardware measures some parameter, feeds it into a microprocessor and the micro then performs some action or sequence based on the data input. Just an idea.
If you have any radio engineering background I would suggest a synthesizer. It would require you to design a VCO, which is a project in itself if you want to design something decent.
