I can't find any black beans here. What would be a good substitution? I don't think I've ever eaten black beans, so I'm not sure of the taste.

Kidney beans will have a mealy texture compared to black beans. Black beans are similar to great northern or pinto beans, but youwon't get the color in the dish. You don't say what they will be used in but I would go with the great norther or navy beans.

I use black beans in my chili instead of kidney beans, so I don't see why you couldn't substitute the kidneys for the black. Though black beans are quite smaller than kidneys, you might want to try a smaller bean for appearance. I'm surprised you can't find black beans where you live. It's a common bean.

Even though I like black beans for the taste and the texture, you can pretty much substitute for any kind of bean. I don't particularly care for red kidney beans, myself. I only use them when I make chili for my husband. If it's for both of us I use a combination of white beans (canellini) and black beans. The texture, more than the taste will be affected, it will still taste good if the seasonings and other ingredients remain the same.

Now that's a problem.I don't like kidney beans in any shape or form.I Love black beans,canned baked beans,lima beans etc..try to find the black beans they sell them in every market.Kidney beans taste way different than black beans.I guess you could substitute?Good Luck

Kidney beans are different from black beans and I don't use them often. I would substitute pinto beans or great northern beans for the black beans.

Sure. Beans come in all shapes, colors and sizes, each with subtly different flavors and textures. From personal experience, substituting one bean for another doesn't usually dramatically change a recipe which uses beans in their whole, pre-cooked form. I frequently use beans interchangeably in all different types of salads and rice dishes. Black beans are certainly a great choice for beans n' rice recipes, but I think kidney, pinto or black-eyed "peas" would all make great substitutes. That particular recipe looks quite flexible, so I think it'll turn out well with substitutions. It will certainly _not_ turn out dry or noticeably different in terms of texture.
