It's a complicated question, and depends on your current state (underweight, overweight, or normal) and your metabolic rate.

Find out your resting metabolic rate (i went to bally's and payed to breathe into a tube for 5 minutes, after which time they told me my RMR). Add your RMR to the number of calories you burn through exercise, and you know how many calories you burn in a day.

If the goal is to maintain weight, eat about the same number of calories as you burn.

If the goal is to gain weight, eat more calories than you burn (i added about 300 calories / day to gain weight).

If the goal is to lose weight, eat fewer calories than you burn in a day.

Keep your diet balanced. Make sure you get enough protein, vitamins, grains, and carbs to supply your body with what it needs. Keep the junk food to a minimum. Snacks should be things like fruit, cheese and crackers (cheese can be fatty, so don't eat too much of it), yogurt, milk. Avoid soda.

I find that how i shop determines how i eat. As long as i buy healthy foods (and avoid buying junk food), i eat healthy foods. Hope this helps, and good luck! =]

The more natural it is, the healthier it is. Processed foods are BAD for you. Most processed meats have nitrites or nitrates in them which cause diabetes and cancer. Many other processed foods have corn syrup or other sugars and salt; empty calories, with no nutrition in them.

A good rule is if it is something that could be hunted or gathered, go ahead and eat it (easy on the animal fats though). Eat lots of FRESH fruits, vegetables and nuts, not frozen, canned or salted. Get your carbs from whole grains and other natural sources like natural rice and baked potatoes (not fries). Get your fats from fruits, nuts, and olive oil.

Minimize the: processed wheat; refined sugars (like corn syrup); processed meat (including deli meat); artificial sweeteners.

Eat 6 small but balanced meals per day. Your carbs should be high in fiber and your proteins should be lean. Fats should be sparing but concentrated in the omega 3's and omega 6's. This will provide a slow but constant stream of vital nutrients. Avoid greasy foods, alcohol, and candy.

find daily calorie intake calculator on the net, enter all your stats and it will tell you how many calories you need a day to maintain your weight.
eat 5-6 small meals a day (eat every 2-3 hours - it optimizes your metabolism)
5-8 servings of fruit and veggies a day
8 glasses of water
have complex carbs for breakfast - they give you energy
have protein (lean meat, legumes etc) for dinner - repairs muscle
dont consume foods that are made of white flour (white bread, cakes, pasta etc.), sugar loaded foods (cookies, icecream, candy etc) and nothing fried, oily.
ofcourse you can spoil yourself once in a while with a little treat:)
