If you want, you could add some tofu, as it will take on the flavor of the sauce that its in. It is also a good source of protein. They also make a soy crumble in your frozen food section that you can use as a meat substitute.
Or, don't use anything in place of the meat.

as far as sauce is going: one tin of tomato paste plus one great tin of chopped tomatoes finally ends up being the the best option consistency for a base... I initiate via sautéeing chopped onion in olive oil -- then upload bell peppers and mushrooms, then throw interior the tomato what-no longer, and simmer it, in many circumstances including some zucchini, eggplant, even grated carrot. And the common herbs and spices. it relatively is not confusing in any respect. The chunkier the extra effective, i think of; I made an extremely vegged-out batch of this the different day, and realised I eat toddler-sized parts of pasta that artwork out to a remarkable plate of nutrition given each and all the chunky sauce on the plate. i've got by no ability discovered a similar keep-bought sauce, and that contains costly 'connoisseur' varieties, labelled 'chunky.' they're by no ability chunky adequate... try heating some chopped garlic in olive oil, and stirring sparkling sliced plum tomatoes around interior the pan till they're warm, and dumping that for the period of your pasta -- sparkling, healthful, and quite undemanding. they must be stable tomatoes, nonetheless, no longer the cardboard iciness food market form.
