Use the all purpose flour, and a slightly beaten egg. Rinse the chicken first, then coat it in the flour, then the egg then the flour again. And don't cook it on high heat, medium is better, and make sure you put some butter or oil in the frying pan. Fried chicken is so yummy-I'm just having a fish fillet sandwich for dinner : (

Try dipping the raw chicken in self-rising flour, then buttermilk, then repeat twice. Drop pieces in hot oil. The coating puffs up while cooking. Drain on paper towels. They are delicious! - Mabel Schwartz

I'd use the AP... Self-rising is better for baked goods.

i say self rising, to me the batter is alittle more fluffy when you use a beaten egg and coat it. ( also add alittle milk to your egg)
