1 head green cabbage, cored and thinly sliced
1 red bell pepper, thinly sliced
1 medium onion, thinly sliced
1 1/2 cups shredded carrots
2 teaspoons kosher salt
1 teaspoon freshly cracked white pepper
1 cup apple cider vinegar
1 cup sugar
1 teaspoon dry mustard powder
2 teaspoons celery seeds
1/2 cup vegetable oil
1/4 cup finely chopped green onion tops
2 tablespoons chopped fresh parsley leaves
In a large, non-reactive bowl, combine the cabbage, bell pepper, onion and carrot, season with the salt and pepper and cover with plastic wrap. Refrigerate for 1 hour before proceeding.
Meanwhile, combine the vinegar, sugar, mustard and celery seeds in a small saucepan and bring to a boil. Stir the vinegar periodically to dissolve the sugar. Once the sugar is dissolved, remove from the heat. Remove the cabbage from the refrigerator and pour the vinegar over the top of the cabbage. Add the oil, green onions and parsley, and toss well to thoroughly combine.
Cover with plastic wrap and return the cabbage to the refrigerator. Allow slaw to sit for 2 or 3 hours before serving, stirring occasionally. Serve with barbecue.

Strawberry Pretzel Salad Recipe courtesy Paula Deen

2 cups crushed pretzels
3/4 cup melted butter
3 tablespoons sugar, plus 3/4 cup sugar
1 (8-ounce) package cream cheese
1 (8-ounce) container whipped topping
2 (3-ounce) packages strawberry gelatin dessert mix
2 cups boiling water
2 (10-ounce) packages frozen strawberries
1 (8-ounce) can crushed pineapple
Whipped topping or whipped cream, to garnish
Preheat oven to 400 degrees F.
For the crust, mix the pretzels, butter, and 3 tablespoons of sugar. Press this mixture into a 9 by 13-inch pan and bake for 7 minutes. Set aside and allow to cool.
In a mixing bowl, beat together the cream cheese and 3/4 cup of sugar. Fold in the whipped topping, and spread over the cooled crust. Refrigerate until well chilled.
In a small bowl, dissolve the gelatin in the boiling water, and allow to cool slightly. Add the strawberries and pineapple, and pour over the cream cheese mixture. Refrigerate until serving time.
To serve, cut slices and serve with a dollop of whipped topping

~~~My Mama's Coleslaw
Chop up a medium sized head of cabbage... (it's better if you chop it - you want it sort of chunky) a bell pepper, and a medium onion, and mix it all together in a big bowl. Add some salt and pepper.
In a sauce pan, start out with 1 &1/2 cups of water, about 1/2 cup of vinegar, 1/2 cup of sugar, about 1 tsp mustard seed, and 1 tsp celery seed. Bring to a boil and pour over the cabbage mixture. Allow it to set for at least a couple of hours, then stir in a few handfuls of grated cheese.
The measurements on the vinegar mixture are only approximate. You can change it around and adjust it to your own taste.

Microwave Melting Chocolate:
In a microwave-safe bowl, melt chocolate chips using either the defrost setting or 10-percent power in the microwave.
Microwave for about 1 minute, then check and stir. If you need more time, do it in 10-20 seconds intervals and check and stir after each addition of microwave time. Remove the container from the microwave and stir the chocolate until completely melted. Baking chips and baking chocolate may appear formed and un-melted after heating but will become fluid after stirring. Blend in cream, brandy, liqueur, or coffee.
How to dip: Hold the stem or green leaves of the strawberry and dip just part of it into the chocolate and swirl, to partially cover. Give the strawberry a little shake as you withdraw it from the chocolate (this will fill in all the cracks and leave a nice even line of of chocolate at the base.) When the strawberry is completely withdrawn from the chocolate, swirl it in a quick, clockwise motion to let the excess chocolate drip off. Place on the prepared cookie sheet. Repeat with the rest of the strawberries.
Either place strawberries into a refrigerator or set aside to allow the chocolate to harden, about 30 minutes. Transfer fruit into a container. Keep cool until about 20 minutes before serving.
Best served at room temperature, to bring out the strawberry flavor.

This is my tried and true strawberry recipe. It is wonderful and I am always asked to bring it. The last few times I made it, I made it with raspberries, which I think I like better.
It won't spoil but could melt if left directly in the sun.
Strawberry Pretzel Salad
INGREDIENTS
* 1 1/2 cups crushed pretzels
* 4 1/2 tablespoons white sugar
* 3/4 cup butter, melted
* 1 cup white sugar
* 2 (8 ounce) packages cream cheese
* 1 (8 ounce) container frozen whipped topping, thawed
* 1 (6 ounce) package strawberry flavored gelatin
* 2 cups boiling water
* 1 (16 ounce) package frozen strawberries
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Mix together the pretzels, 4 1/2 tablespoons sugar and melted butter. Press into the bottom of a 9x13 inch pan. Bake for 10 minutes, or lightly toasted. Set aside to cool completely.
2. In a medium bowl, beat the sugar and cream cheese until smooth. Fold in whipped topping. Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes.
3. In a medium bowl, stir together the gelatin mix and boiling water. Mix in frozen strawberries, and stir until thawed. Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 1 hour.

they make a cole slaw dressings , so very good , you'll never use mayo again . it's on the island with rest of salad dressings. also, you can go to www. verybestbaking.com & find all kinds of good recipes when you type in strawberries

take and quarter a head of cabbage. thinly slice into strips. toss with some vinegar(either cider or white) and oil. slice some green olives stuffed with pimentoes.toss them in. cover securely and refrigerate. when you get there just before serving. shake the bowl really well to re- mix.
as far as the strawberries, slice or quarter. add a little sugar. mix well. refrigerate overnight( they'll make therie own juice) serve over shortcake or angel food cake slices with whipped cream

I never use mayo. This is my recipe for cole slaw:
Shred cabbage very fine. I sometimes add red cabage for color. I slice very finely one green pepper and one red pepper, also for color. I chop finely either fresh parsley or cilantro, and use lots and lots of fresh garlic. Salt, pepper, a drizzle of olive oil and some wine vinegar or fresh lime or lemon juice. That's it!

Strawberry Salad
INGREDIENTS
1-1/3 (6 ounce) packages strawberry flavored gelatin
2 cups boiling water
1-1/3 (16 ounce) packages frozen strawberries, thawed and drained
1-1/3 (20 ounce) cans crushed pineapple, drained
1-1/3 cups chopped walnuts
5-1/3 cups frozen whipped topping, thawed
DIRECTIONS
Mix gelatin and water together. Stir until dissolved, then add frozen strawberries. Chill until slightly firm. Fold in nuts and pineapple. Add whipped topping. Keep in the fridge until serving.
Cole slaw serves 6
INGREDIENTS
1 small head Cabbage, shredded
1/2 Bell Pepper (red, green or yellow)
4 small Green Onions, chopped
1 Carrot, shredded
1/2 cup Marzetti® Slaw Dressing
1 cup Sour Cream
DIRECTIONS
Stir together Marzetti® Slaw Dressing and Sour Cream. Combine cabbage, peppers, onion and carrot, then toss lightly with mixture.
