try this recipe for oven fried chicken. much healthier than using oil.

3 pounds chicken pieces, including 2 legs, 2 thighs, 2 breasts
1 1/2 sticks unsalted butter, melted
1 garlic clove, minced
1 cup fresh bread crumbs
1/3 cup grated Parmesan
2 tablespoons chopped parsley, oregano and/or tarragon
2 teaspoons paprika
Salt and pepper

Preheat oven to 350 degrees F.
Melt butter in a roasting pan. Transfer 3/4 of the melted butter into a shallow dish and stir in the minced garlic. In another shallow dish combine bread crumbs, Parmesan, chopped herbs, paprika, salt and pepper. Coat each piece of chicken with the garlic butter mixture, then dredge in bread crumb mixture and transfer to roasting pan. Repeat process for remaining pieces of chicken. Drizzle any remaining garlic butter mixture over coated chicken. Bake in oven for 1 to 1 1/4 hours until coating is golden brown and chicken meat slides off a fork

The answers that you have received cover many alternatives, but let me suggest one more. When you say you "fried" the chicken (coated in healthy bread crumbs), did you actually deep fry it (lots of oil at high heat) or did you put about an inch of olive oil in a saute pan and crisped it up? That is actually more like a shallow, pan fry and works well with olive oil - even with the lower smoke point. Another way to go at this would be to use the olive oil or canola oil and do a poaching - let the oil simmer (very small bubbles on edges of oil - about 175'F- and you will get a great coating that is healthy. Putting the chicken in a hot oven on parchment paper would also work, but sometimes not the best idea in the hot summer weather.

Fried chicken isn't bad for you. But you just can't have fried stuff all the time. That's what is bad for you! No, olive oil would not make it any healthier.

Please note: as tasty as the recipe below my post is, it is NO HEALTHIER than frying. Fat is fat. It doesn't matter if it's transfat or not, butter, olive oil, margarine or Crisco. Removing the skin doesn't really lower the fat much either, although the poster is correct that you can fry without the skin. Enjoy your fried chicken, but limit the number of times you have it in a year.

If you want the fried chicken taste, brush chicken with olive oil , sprinkle with herbs, salt and pepper, and bake it in the oven. It is much healthier.

Fry it in canola oil there is no trans fat when breading the chicken just put it in the flour and herb mixture let marinate in that for a couple of hours(refrigerated of course) then before frying dust it again with flour mixture fry in deep fryer for no less then 12 min. if you have a fryer that is pressurized then 12 minutes is all it takes always remember the pop the thigh before frying because there is a vein in there that will make it look like it is still bleeding if not popped. when placing pieces into fryer fry thighs then breast then legs then wings. if putting a whole chicken into the fryer at one time. For those of you who pan fry I can't help there. No need to use egg or milk when frying chicken.

i don't think you could fry in olive oil. olive oil has a low smoking point, which means it gets too hot too fast, and you wouldn't be able to fry chicken in it for however long it needs to fry without it smoking up and possibly catching fire. fried chicken isn't that bad. just need to fry it quickly so that the crispy crust forms fast, and the oil won't get absorbed into the chicken

olive oil wouldn't be so good for fried chicken b/c it has a lower smoking point. also, there isn't much difference in calories/health.

You can't fry chicken in olive oil. It has a low smoking point and will burn thus making anything you are frying taste like burned olive oil.

yes but even better if fried withouot the skin. Dip the chicken in an egg wash then batter it will still crisp up with out the fat of the skin.

That would be healthire than shortening. If you remove the skin and any excess fat from the chicken first, it's even healthier.

Best way is to spray it with a light coating of cooking spray and bake it in the oven.
