Originally my husband was supposed to teach our son Spanish and about Ecuadoran culture. Unfortunately he is several cards short of a full deck. I still want my son to know about his heritage though, his family lives across the country so I can't rely on them for everything. How do I go about making sure he knows Spanish and about Latin history? I have good vocabulary but I don't always conjugate things right.

try traditional bed time stories im sure there will be some online from your culture , and as he gets older I'm sure he will pick a few things up until he reaches the age where he can take a language class

You can try your best! That is all that you can do.
As far as language goes, if you don't speak to him in Spanish at home, it would be useless to send him to classes. There are children's language classes at your local community college.
As far culture goes, it all primarily revolves around the Roman Catholic religion and food. Not all of it, but most of it does. I would ask your in-laws about any special or family traditions. They may have a special celebration for Christmas and Easter. As far as food goes, with the internet, you can find recipes for certain dishes/food. A very simple and extremely easy one, would be plantanos fritos or maduros (same thing). Then maybe you could try to make humitas. If you have any local Latin restaurants where you live, I would try eating there first, so you can get a feel for the food. It isn't really different, with some exceptions of course (the figs & raisins in everything), but it is good. A cuban or pervian restaurant would be a good choice. Many Latin cultures have the same recipes for food. I would ask your family for some input as far as his Ecuadorean culture goes, as each family is different and has different values and customs. It all comes from where in Ecuador they are from. Besides the internet, you might want to check out the library. Good luck!

find a language class for him, kids learn language better than adults. there are museums dedicated to hispanic/ south american cultures, do a web search to find more in your area.
