I assume we are talking BBQing, right? Let the BBQ warm up. If you are using charcoal, let the charcoal heat up for about 20 minutes before placing anything on the grill. Initially, turn frequently. Brown, then turn over, brown the other side. Make sure you don't burn the meat or vegetables. When I am BBQing chicken, I brown on both sides, then place the chicken up on the first shelf of the BBQ, close the lid and let it cook evenly. Steak, I char on both sides, depending upon how well you want it done, and again, place it on the top shelf of the BBQ. The true test of a good grill master is to not let it burn! It really is trial and error.
