I would choose Anim8or, and the Anim8or website has a manual on how to do it..

There is also wings3d.
There are all 3d modelling programs. If you are interested in animation you might look at Daz Studio from www.daz3d.com . Its free and reasonably good for charachter animation.
Blender is the more powerful, and more difficult to learn. The manual is available in the documentation section of downloads from www.blender.org
