Some ideas that I didn't see mentioned above that we're using again this summer:

Quizzing each other. We have some driving trivia books as well as Brian Quest cards (both ones for the car and ones for the grades they just finished). We take turns being the reader and the answers and actually have fun learning something or stumping mom and dad. http://brainquest.com/

Small space crafts. This year the girls have a small bracelet knitting kit that they'll get when we leave. We'll see if they can have bracelets for the grandparents before we get there in 35 hours of driving.

For younger kids, window clings. They have whole play sets that will stick to glass or the plastic play mat that they come with.

depends on how old they r
1-5: u could sing or something
6-10: at this age they probably have a nintendo ds or a psp so just let them be
11-13: they might be talkin on their cell phone the whole way or u can have a nice talk with them somethin funny 2 keep them entertained
14 and up- forget it they dont even really care
but the number one thign 2 do is 2 pop in a dvd and let them watch it
other games r-name the liscence plate(self explainatory
punch buggy(whenver u see a volkswagon beetle u punch everyone in the car and say the color like blue bunch buggy no punch back
eye spy(that gets really boring after a while and pretty stupid especially if u r driving on a counrty rood surrounded by trees on a rainy day
or the abc game where u go A my name is sbby my husband/wife name is Abraham we live in alabama and we sell apples i love that one gets hard after T though

One game I used to play with my family, is looking at the signs outside of the car, and we would go through the alphabet a-z (it was quite tricky to find words with the letter q!)
So if you start A, you would look for a word on a sign with the letter A on it, or a license plate, etc.

Depending on how long & far your car trip is, you could try and find as many different state license plates as you can.

You could also play the telephone game (Where you tell a person a sentence, and they have to tell it to the person next to them, etc. till the last person, and they say it out loud, and you see if it's the same sentence. )

Or you could do games like Mad Libs. You could also go online and find some pictures for them to color.

Well we always used to count different state licenses and see who acme up with the most...OR used to do the ABC game...where you pick what topic you want first like...peoples names or fruits or whatever you have in mind then the first person starts && goes....A is for apple then the next person has to repeat the folowing things listed before them like A is for apple then they do B and say B is for banan then the 3rd would have C and say a is for apple b is for banana and C is for carrot but the person that cant think ofa word for the letter looses kept our little minds busy but i dont know how old yours kids are...well good luck

2. first u pick a theme
next the first person thinks of a word or phrase that relates to the theme and starts with A.

This isn't so much a game as a tip my mom used to use on long car rides: give each child a roll of quarters. For every time they argue, each one has to hand up a quarter. If they don't fight, they have ten dollars to spend at their destination. Yes, it's bribery, but it really works!
