is it better to get no sugar added/fat free/ or count the fewest calories when choosing something like ice cream?

Unless you get the organic, all-natural HEALTHY version of ice cream (which is arguably unhealthy simply because of the sugar and fat content anyways) all "ice cream" is really just frozen chemicals.
Opt out, and you will be doing yourself a HUUUUUGE favor.

That really depends on the person. Both sugar and fat can have detrimental effects, yet both are essential for life. If you are worried only about the effects on your appearance, I would say that fat free is smarter than no sugar added. This is because carbohydrates, ie sugar, are the primary target in energy production in the body. Carbohydrate metabolism, in addition to requiring less oxygen per calorie burnt, also contains less calories per unit gram than fat does. Counting calories is always a good idea, however if there are two ice creams that are identical in caloric value, and one has more fat and the other has more sugar, I would suggest the sugar one. There are obvious exceptions, such as blood sugar problems, that an individual should be aware of.

Fat contains more calories than sugars (by a factor of 2), but is important to the texture and taste of ice cream.

Ice cream should not be eaten if you are in any way concerned about fat/sugar/calories. Do yourself a favor and don't eat it, if you insist on a frozen treat try frozen yogurt but even then that isn't good for you.

look for something with less calories, then lower sugar and only then lower fat.
