I used to work at a restaurant where we cut them into quarters, brushed with olive oil, the dusted with garlic powder, salt, and pepper, then grilled them. tasted great alone or dipped in ranch

Pour a 1/4 cup of olive oil into a zip lock type bag, add 1 packet of Seven Seas Italian dressing mix and the potatoes and allow them to marinate for about 30 minutes. I like to cut the new potatoes in half first but you don't have to. Brush the hot grill grate with oil and place the potatoes over the heat for 15 to 20 minutes turning them once. Enjoy. Dill, salt and pepper with the olive oil is excellent also...

You could wrap it in aluminum foil. You could cut it up, add chopped onions, peppers and butter, wrap all in aluminum foil and cook. You could use a griddle on the grill and fry the potatoes. You could lay potato slices directly on the grill. Just make sure the pieces don't fall thru.
You could also cut the potato into chunks, run thru with a skewer and add onions, tomatoes, peppers etc...coat with various seasonings and place on the grill.

I like to rinse well, leaving skin on & cut into cubes. Place potatoes in the middle of a large sheet of foil & add sliced onions, a couple of cloves of minced garlic and parsley. Drizzle well with olive oil, then seal into pouch. Grill over medium coals til fork tender, turning pouch with tongs. You can open & add shredded cheese if you like, but either way they are wonderful!!
