Spicy Asparagus!
Put a little olive oil in a covered skillet, just enough to coat the bottom and coat the asparagus. (1/2 Tablespoon for 20 spears)
Heat should be med-high.
Lightly sautee the asparagus, shaking the skillet to move the spears around. Add a little seasoned salt (I like garlic & wine seasoning from Melting Pot). Cover with the lid and steam just until the asparagus turns bright green.
Remove from the heat, let the skillet cool down a little. Shake the asparagus around in the skillet to keep it evenly heated and coated.
Before you serve it, sprinkle it with a little cayenne pepper. (Don't do this while the skillet is hot though, the smoke will choke you!)
It is yummy and healthy - your friends will thank you!

Since you're grilling, keep things light. Serve the shrimp kabobs with garlic rice, grilled corn on the cob, tossed salad, fresh fruit & plenty of hot garlic bread. Don't forget dessert - plug in the icecream maker & it will be ready before dinner is finished. Serve with sliced pound cake.......

Place wedges of red potatoes, onions, tomatoes, pinapple chunks, and red and green bell pepper slices on each kabob along with the shrimp. Brush with olive oil or Italian dressing immediately before grilling. Serve with rice made with a little chicken broth, or even better, shrimp stock (if you can find it).

I have tons of recipes and meal ideas, but that could take forever to pass on. The easiest suggestion is to get some frozen diet dinners, such as Healthy Choice, Lean Cuisine, and Smart Ones. Not only are they cheap and convenient, they are nutritious, delicious, and no cooking or clean-up (except the fork). Some of my favorites are HC Country Herb Chicken, SO Spicy Schzechuan Vegetables & Chicken, LC Salisbury Steak. I could go on & on. They're yummy and so low-cal.

Peel 1 potatoe per person. slice about 1/8 " to 1/4 inch thick. Also peel and slice some onions same thickness.
Put potatoe in foil large enuf to hold it plus the sliced onions and butter and still able to wrap it up like a packet. FOLD edges so it wont leak butter all over.
To assemble. Put each potatoe on the foil (spray with PAM first to prevent sticking) add how many onions you like on top. Add butter or margarine (about 1/2 stick per potatoe and onion pack) cut in pieces...dot around over all. Sprinkle with salt and pepper. Seal TIGHTLY and place on grill over INDIRECT heat.( just lite half the grill and place packets on other side. close lid and forget about them for about half an hr. Start shrimp now, after pot. have been cooking 30 minutes or so. Potatoes will continue to cook while shrimp is being cooked. takes approx 45 minutes for potatoes on the grill. Can also do in oven at 400 degrees for an hr. if this is easier for you. Put on cookie sheet in oven so when you take them out you dont rip foil and lose butter.
Can turn over carefully on grill after first 25 minutes. Enjoy.
Shrimp On The Barbie-
- 12 Giant Prawns, shelled and heads and tails intact
1/4 cup Butter
1 cup Orange juice (freshly, squeezed)
2 tablespoons Sherry
1 teaspoon Orange Zest (grated)
2 each Green onions, tops and white
1 teaspoon Ginger root, (freshly grated)
Soak a dozen long wooden skewers in water for 30 minutes. Then push skewers through prawns, lengthwise, from head to tail with only 1 to a skewer. Combine all ingredients in saucepan and cook over medium to low heat, stirring, until butter is completely melted. Dip skewered prawns in the orange sauce and position on oiled grill rack about 4 inches above the coals. Baste liberally with sauce and grill for 2 minutes. Turn the prawn over and baste again, cooking for another 2 minutes. Smaller prawn will be done at this point, but continue basting and turning larger prawn until they are pink and cooked through. Remove from heat immediately when done, as they will get tough if overcooked. Use any remaining sauce for a dip for the prawns.

Orange almond salad is easy to make:
- Salad greens (lettuce, spinach or whatever you like)
- blanched, slivered almonds
- 1 can Mandarin oranges
- olive oil
- taragon vinegar
Pan toast the almonds in a little oil over medium heat, stirring continuously, being careful not to burn. Remove to bowl and set aside.
Prepare dressing by adding vinegar to olive oil, to taste.
Toss greens with dressing, add orange segments and almonds and serve. You can use already-made taragon vinegar (Heinz makes this), or make your own by adding dried taragon to ordinary distilled white vinegar.

DIRECTIONS
Combine all ingredients in a plastic bag; toss to coat. Pour into an ungreased 13-in. x 9-in. x 2-in. baking pan. Bake, uncovered, at 450 degrees F for 35 minutes or until potatoes are tender. Remove from the oven and cover with foil to keep warm while broiling the fish.

This recipe is from Paula Deen's show on Food TV. It worked out great because I was able to blanch and bundle them and have them all ready to pop in the oven in advance. They looked as yummy as they were. Highly recommended!

1 lb fresh green beans
olive oil

Preheat oven to 350°F.
Blanch green beans for 3 minutes. Toss them in olive oil and salt and pepper. Bundle about 5 green beans and wrap a piece of bacon around the bundle. Place in a roasting pan and roast for 10 to 15 minutes, until bacon is cooked.

"Wedge Salad"
Take a head of iceberg lettuce and quarter it into 4 wedges. Put each wedge on a seperate plate. Pour ranch or blue cheese dressing over wedge. Crumble bacon (bacon bits if your REALLY short on time), chopped tomatoe, and crumbled blue cheese over wedge and around the plate. Wa-LA! Easy, beautiful, and yummy!

"GARLIC BREAD"
1 16-ounce loaf of Italian bread or French bread
1/2 cup (1 stick) unsalted butter, softened
2 large cloves of garlic, smashed and minced
1 heaping tablespoon of freshly chopped parsley
1/4 cup freshly grated Parmesan cheese
Method 1 - Toasted
1 Preheat oven to 350°F.
2 Cut the bread in half, horizontally. Mix the butter, garlic, and parsley together in a small bowl. Spread butter mixture over the the two bread halves. Place on a sturdy baking pan (one that can handle high temperatures, not a cookie sheet) and heat in the oven for 10 minutes.
3 Remove pan from oven. Sprinkle Parmesan cheese over bread if you want. Return to oven on the highest rack. Broil on high heat for 2-3 minutes until the edges of the bread begin to toast and the cheese (if you are using cheese) bubbles. Watch very carefully while broiling. The bread can easily go from un-toasted to burnt.
4 Remove from oven, let cool a minute. Remove from pan and make 1-inch thick slices. Serve immediately.
Method 2 - Soft
Preheat oven to 350°F. Make the butter, garlic, parsley mixture as above. Make 1-inch thick slices into the bread, but do not go all the way through, just to the bottom crust. Put a teaspoon or two of the butter mixture between each slice. Wrap the bread in aluminum foil and heat for 15 minutes in the oven.

Ingredients:
12 pieces NESTLÉ® TOLL HOUSE® Refrigerated Chocolate Chip Cookie Bar Dough
1 package (8 ounces) cream cheese, at room temperature
1/2 cup NESTLÉ® CARNATION® Sweetened Condensed Milk
1 large egg
1 teaspoon vanilla extract
1 can (21 ounces) cherry pie filling
Directions:
PREHEAT oven to 325° F. Paper-line 12 muffin cups.
PLACE 1 piece of cookie dough in each prepared muffin cup.
BAKE for 10 to 12 minutes or until cookie has spread to edge of cup.
BEAT cream cheese, sweetened condensed milk, egg and vanilla extract in medium bowl until smooth. Pour about 3 tablespoons cream cheese mixture over each cookie in cup.
BAKE for an additional 15 to 18 minutes or until set. Cool completely in pan on wire rack. Top with pie filling. Refrigerate for 1 hour.
