Because, if I am not mistaken, Paltalk connects cams to cam (peer to peer!) Thus you are directly connected to the system, system has to know your IP thus anyone can know your IP.
If you use an IM session your IP can be retrieved, if you send an email the email IP can be viewed.

there is some method to know ip addresses.... some websides recognised ip address with help of some method which r hidden from user.. u also can check ur ip using side.. try it "www.myip.com" ........ if u r visiting any website which contains hidden method so webside developer can get ur ip...
