Beijing has the coldest winters. Why? It is the farthest north of all the cities you listed.
Guangzhou and Hong Kong (Xiang Gang) have fairly similar climates. Why? The two cities are quite close (120 km) to each other (in Southern China).

Q1. Beijing is the coldest when compares with the other 4 cities, the temp. can drop to -20 degree C or even lower, it is in the most North of all these 4 cities as well. Shanghai is a seaport at the end of Yangzte River, the winter weather can dtrop to around -5 degree C and can't be colder than Beijing! Guangzhou and Hong Kong are in Tropical area, so, they have no snow and the winter is not so cold as well.
Q2. In terms of climate, Guangzhou and Hong Kong is quite near to each other, (only 2 hours of train) and the weather is almost the same!

Dogs are a delicacy and are usually eaten in winter as opposed to snakes which are usually eaten in summer. This has to do with the Yin-Yang-Balance. I'm not sure about cats though. Being a Westerner here in China I have eaten dogs and snakes on numerous occasions. It's both very tasty and you just have to get rid of the impression that these dogs are like pets, they're particularly bred for being eaten. Even Chinese who have dogs as pets won't find it cruel or strange in any way to have some dog every now and then provided it's not a pet dog. Hong Kong is China, at least when it comes to the heritage, there is no reason why they wouldn't eat dogs and cats there, both are Chinese delicacies (as already pointed out). However, you will only get this kind of meat if you ask particularly because it can be quite expensive. So don't worry that you order beef and they give you dog because they're out of beef, that wouldn't be a good deal for the restaurant.

i think it is bejing.
And guangzhou&hongkong has the similar climate. it is quite warm in winter.
i live in shanghai.i should say the weather here is quite comfortable.hohohohoho~~~
