It baffles me why christians don't accept that the conscious mind is just chemical reactions and electrical impulses in your brain.
The analogy of someone driving a car is just silly.
That would suggest that creatures who don't have souls must have better brains as they can run on auto pilot and we can't.
The evidence against the soul is obvious, yet they refuse to see it.

I've been asking this for a while. Furthermore, the mind (which is essentially what others call the soul) is strongly affected by minute changes to the body such as a lack of vitamins, the presence of drugs, the menstrual cycle and various mental and physical diseases. Also consider the case of Phineus Gage, who in a bizzare railway accident had a steel rod blown through his brain. He survived, but his mood and personality changed so drastically that he became estranged from his friends and family. If the mind is so affected by the condition of the body, how can anyone expect that the soul could survive entirely independently of the body?

The conditioned soul is sheathed in two bodies. One is the gross body, made of earth, water, fire, air, and ether, and the other is the subtle body, composed of mind, intelligence, and false ego. The soul occupies the same subtle body throughout all the changes of gross bodies. Thus all his memories and conceptions from previous lives travel with him, (The soul) stored within his mind, from one body to the next. In strict accordance with nature's law of karma, the soul receives a gross body that exactly conforms to the subtle conceptions and desires stored in his mind. The brain is just a device which consciousness is manifested.
For example, if you watch a football game on TV and a power failure occurs, the game disappears from the screen. According to your logic, this is the evidence that the football game was produced by the TV. Actually, the machine simply transmitted the game that was going on independently of the TV. In the same way, consciousness is transmitted by the brain but not produced by it.

Considering that the brain (which would account for amnesia) is a part of the physical person, amnesia has nothing whatsoever to do with the soul which is a person's spirit.

This is indeed a very good question to be appreciated by all the philosophers... Let me explain that your understanding of soul of not being a physical person is perfectly right. The scriptures such as Srimad-Bhagavatam and Bhagavad-gita describe soul at the subtle level and they deal with this topic in depth.
Amnesia is the mal-function of brain after the latter is damaged. So in one sense this is a function of physical element in our body. Right!!!
Now Krishna in Bhagavad-gita has mentioned mattah-smrtir-jnanam apohanam ca From Me comes Smrtir - rememberance, jnanam - knowledge and apohanam - forgetfulness. So Krishna being seated into our hearts as Supersoul keeps sanctioning and witnessing our activities. If we want to foget or remember something, it is He who sanctions our action and we forget that thing.
Now for Krishna to sanction any action of a living entity there should be karma - result of the actions accumulated with the living entity. If the karma of one does not allow him to think about some excellent idea, he will not be able to get guidance from within from Krishna. Isn't it.
Amnesia can therefore be caused by:
1. One's bad karma - which will allow brain to get damaged and the rememberance will not flow from Supersoul.

The soul can die
(Ezekiel 18:4) Look! All the souls—to me they belong. As the soul of the father so likewise the soul of the son—to me they belong. The soul that is sinning—it itself will die.
You have to be alive to die.
And animals are souls.

Amnesia [ forgetting] is just a breakdown of braincells.
As to what happens when we die.
(Ecclesiastes 9:5-6) For the living are conscious that they will die; but as for the dead, they are conscious of nothing at all, neither do they anymore have wages, because the remembrance of them has been forgotten. 6Â Also, their love and their hate and their jealousy have already perished, and they have no portion anymore to time indefinite in anything that has to be done under the sun.

Actually, a person is made up of a body, a soul, and a spirit.
The brain is just an organ of the body that can get sick.
The Christian belief is not that we will float around without a body. The Bible says that our bodies will be raised like Jesus' body was raised. Our new bodies will be like Jesus' glorious body. We won't get sick or die anymore.
1 Cor 15.12 Now if Christ be preached that he rose from the dead, how say some among you that there is no resurrection of the dead?
13But if there be no resurrection of the dead, then is Christ not risen:
