I have boneless skinless chicken , small gourmet potatoes, garlic, red pepper, onion, black beans...what kind of meal could i make...or a casserole?

Put some olive oil, salt, pepper, and rosemary on the chicken and bake them in the oven. Take the potatoes, garlic, red pepper and onion and saute them a in butter/olive oil mixture until the potatoes are tender. Leave the beans for another day. Enjoy!

After you wash the chicken, pat dry. Place in a baking dish.
In a small bowl, mix 1/2 cup mayonnaise, 1/2 cup milk, and 1 package of ranch dressing. Mix all together.. Pour over chicken and place in a pre-heated oven of 350 for 40 minutes .
Microwave the small potatoes.to almost done. slice or dice them when cool. you can have added fresh parsley, or 1 tsp of dried parsley, and 1 Tbls of butter, Place in a small skillet (salt and pepper to taste on you plate ) cook them slowly on back burner., 10-15 minutes before you sit down to eat..
The , red pepper, onion and black beans you have can be a cold salad. Cut up and put in a dish and add 1/2 cup of Italian dressing. You can add a cucumber if you have it.(cubed)........You don't need the garlic for anything this time.

keep it simple:
oil the chicken and season with salt and pepper, roast it in the oven at about 350 until the meat reaches 165 degrees.
Cut the potatoes in half or quarters, and season the same way. You can chop the garlic, pepper, and onion up and saute them in a pot with seasonings and add the black beans and simmer until wamred through. Add any spices you like to each of these to jazz them up if you like.

ok so grill the chicken with the red pepper or just pan fry it or bake it whatever floats your boat, cut the potatoes into small pieces(not micrscopic) cut the onion put the onion garlic and potatoes together in a pan and bake them and then make the black beans reglar, if you have rice you can make black beans and rice, you will have red pepper chicken, garlic potaatoes and beans or beans and rice, and if you have some kind of vegtavble it will make a world of difference, even frozen vegtables, nothgin too fancy

Lemon Chicken Tenders

INGREDIENTS

3/4 teaspoon paprika
3/4 teaspoon salt
1/2 teaspoon pepper
4-1/2 large boneless, skinless chicken breasts, cut into 2-inch pieces
3 eggs, slightly beaten
1-1/2 cups Italian seasoned bread crumbs
3/4 cup sugar
3/4 cup lemon juice
2-1/4 teaspoons curry powder

DIRECTIONS

Preheat oven to 400 degrees F (200 degrees C).
In a bowl, stir together paprika, salt, and pepper. Sprinkle seasoning over chicken pieces. Dip pieces in egg, then dredge in bread crumbs. Arrange chicken pieces in a single layer in an aluminum foil-lined 15x10-inch jelly roll pan.
Bake in preheated oven for 15 minutes, turning once.
In a small saucepan over medium-low heat, stir together sugar, lemon juice, and curry powder, stirring until sugar dissolves, about 5 minutes.
Drizzle lemon sauce over chicken, return to oven, and bake 5 minutes more.

Black Beans and Rice

INGREDIENTS

1 medium onion, chopped
1 medium green pepper, chopped
1 medium sweet red pepper, chopped
1 garlic clove, minced
1/2 teaspoon dried basil
1/4 teaspoon pepper
1 tablespoon tomato sauce
1 (15 ounce) can black beans, rinsed and drained
1 cup cooked long-grain rice
1 tablespoon red wine vinegar
1/4 cup shredded Cheddar cheese

DIRECTIONS

In a nonstick skillet that has been coated with nonstick cooking spray, saute the onion, green and red peppers, garlic, basil and pepper until tender. Stir in tomato sauce. Add beans, rice and vinegar; heat through. Transfer to a serving dish; sprinkle with cheese.

CHICKEN IN THE OVEN WITH POTATOES

8-10 chicken pieces, thighs, legs and breasts
4-6 potatoes, cut into eighths
1 (1 lb.) can tomatoes, crushed
Olive oil
Parmesan cheese
Oregano
Salt and pepper
Garlic powder

Using a 13 x 9 inch baking pan; spread 2 tablespoons olive oil in pan, place in chicken pieces; scatter cut up potatoes around chicken. Place tomatoes on top evenly on chicken and potatoes. Sprinkle salt, pepper and oregano on potatoes and chicken pieces. Then sprinkle on Parmesan cheese liberally. Pour about 2 tablespoons olive oil on top of entire pan of chicken and potatoes. Bake at 400 degrees for 1/2 hours. Drain liquid from pan and continue baking for another 40 minutes until potatoes are crisp. Serve with a tossed salad. Great for surprise guests!


CHICKEN AND BLACK BEANS

5 lb. chicken thighs
1/4 lb. black beans
5 cloves garlic
1 tbsp. oil
1/2 tsp. salt
2 tbsp. cornstarch
1/2 tsp. sugar
1 tbsp. oyster sauce
1 bunch green onion, chopped

Rinse black beans. Mash beans and mix with garlic. Heat oil. Add bean mixture and saute for 1-2 minutes. Then add chicken and saute. Add salt. Cover partially and cook until done. Mix cornstarch with water. Add cornstarch, sugar and oyster sauce. Cook until gravy thickens. Garnish with green onion.

you could make a stir-fry.................
onion and garlic in the pan first...let it simmer...don't let the garlic turn brown otherwise it gets bitter...just add some peanut oil. maybe if you have a lime or two somewhere or a lemon you could add a bit of the rind...and then some of the juice later on...then put the chicken in, sliced, stir it around. and if you wanted to, add a bit of honey to counter-act the acidic juice of the lemon/lime and also i suggest adding some green vegetables like snow peas or spinach...
snow peas are great when you blanch them...you put them in a pot of hot water on the stove, keep them in there until they are a nice colour or for about 5 mins, then take them out and immediately put them in a bowl of cold water-ie refrigerated water. they get realllllly crispy. also, peanuts are delicious in stir-fry.

by red pepper i'm assuming you are meaning capsicum. not chilli...?
there are all sorts of fancy recipes for making them tender and marinated or something...but can't help you much with that.
black beans i've never cooked before, so couldn't help you, but i'm sure other people can and i'm sure there are recipes on the net too.

with the potatoes, you could boil them first for a bit, then take them out, chop them up into cubes, then either roast them, or fry them in another pan with a bit of thyme, rosemary, lemon juice and the rind too.
