Here is an easy one!-
Spaghetti Pie
Cook enough spaghetti for 5 people. While thats boiling, cook some ground beef (2lbs). Drain them both. In a large casserole dish mix together 3 eggs, 1cup of Parmesan cheese, and 2 tablespoons of melted butter (or margarine) and the cooked and drained spaghetti.(I mix the stuff in a side dish then add spaghetti, easier to beat the eggs!) Heat a jar of spaghetti sauce. Layer ground beef, sauce, and mozzarella cheese on top of spaghetti. Bake for about 25-30 minutes at 350 degrees. Enjoy!! Nice twist on spaghetti. Good luck, you can do it! All things take practice!

I suggest buying a children's cookbook--really! they have simple, good recipes and even better, they usually have tips and tricks. just go to a book store and look through the kids section. some are really simple, but other books have stuff that you could cook to impress adults with, even pastries and desserts! i like these better because the recipes are good but don't require crazy ingredients like veggies u never heard of and stuff like the "adult" cookbooks. so check them out at the bookstore near you, there is bound to be a couple of good books, even for the adult, novice chef.

Try the Betty Crocker Slow Cooker Cookbook....all you do is add ingredients and the slow cooker does the rest. The recipes are simple, if you can measure you can make them!
My favorite is the Gumbo recipe...yummy, my family loves when I make it and my mother requests it for her birthday...and everyone thinks it takes forever to make...it takes 20 minutes to put together!...you can email me if you'd like the recipe to try it before you buy the book...

chicken parmesan:
very easy to make
I take chicken breasts and slice them into two pieces to make a thinner breast which also makes twice as much for half the price
next get a bowl and put in flavored bread crumbs, another bowl
with 2 or 3 fork whipped eggs. a large frying pan with maybe a 1/4 in. of vegetable oil heat oil on stove. then take a chicken breast and dip in the eggs then coat with bread crumbs. take the breaded chicken and put in the oil and fry both sides till lightly browned. next you will need a baking pan take your pan and cover bottom with tomato sauce as you fry the breasts lay in the sauce one layer till all chicken is done and in the pan next cover the chicken some more sauce and top with mozzarella cheese either shredded or thinly sliced next
cover with aluminum foil and bake at 350 deg. for 45 min to an hour take out of oven and serve topping each piece with a little more sauce.
to tell you the truth I cheat.
I use canned hunts tomato sauce flavored with meat
progresso flavored bread crumbs
I've made this a lot and I think it"s as good or better than restaurant. sometimes i use shredded kraft italian mix instead of plain mozzarella. prep time gets shorter the more you make it. I can prepare and cook this for 28 people in 2 hours
so for five easy.

Here are some of my family favorites.
Pot Roast
simple..
ingredients
pot roast, potatoes-peeled and cut into chunks
baby carrots
canned whole green beans-optional
can of cream of mushroom
lipton onion soup envelope
soup can of water
place roast in roasting pan, place veggies around roast, mix soups and water and pour over roast and veggies. cook for about 1-2 hours, depending on size of roast. 400 degree oven. serve biscuits to sop up gravy... Can also cook this in a crock pot for 4-6 hours on low
Hamburger Pie
1# ground beef
1/2 c. chopped onion
2- 16oz cut green beans, drained
1- 10 3/4 oz condensed tomato soup
1/4c. of water
salt and pepper to taste
3 med potatoes, peeled and quatered
1 beaten egg
milk
1/2 c. shredded chedder cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in beans, soup, water and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 25-30 minutes.
makes 4-6 servings
This is quick and easy. A family favorite.
Saturday Chicken
5 servings
10 chicken pieces (or whatever you prefer)
(you dont have to use that many chicken pieces. Use how many pieces you want. the rest of the recipe stays the same.)
1 can condensed cream of mushroom (or cream of chicken)
1 cup of cream (dont cheat and use milk; the cream makes a lot of difference)(i have cheated and used milk lol it still was good but the cream does make a difference)
salt, garlic powder, and paprika- to taste
chopped parsley
Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.
Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.
Broccoli Chicken Casserole
2-3 boiled chicken breasts, diced into small chunks
(just boil the chicken for at least 10-15 minutes or until no longer pink)
Cool and then cut into chunks
1 pkg broccoli
1 can of cream of chicken
Pepperidge Farm Stuffing
1/2 c. mayonnaise
1 1/2 tsp. lemon juice
4 oz pkg mild cheddar cheese
Boiled the broccoli for 5 minutes, then drain. I was too afraid to put uncooked broccoli in the casserole, (thought i would ruin it).
Combine soup, mayonnaise, and lemon juice. Mix with broccoli and diced chicken. Sprinkle with cheese and stuffing mix. Bake at 350' for 35 minutes :0}
