Because the ice cream reacts with your saliva and creates a thicker more mucousy secretion which can irritate the back of the throat, so then we try to clear our throat and cough.

I'm allergic to dairy so I develop mild cold-like symptoms when I have too much dairy. Most things just gives me a stuffy nose or some throat phlegm, but ice cream and sometimes yogurt make me cough. I've never had symptoms last for more than a half hour.
From what my doctor has told me, it's fairly common in people who were lactose intolerant as babies, and there's really nothing you can do to about it except not eat dairy. I don't know about you, but a little coughing is not enough to make me stop eating ice cream and cheese!

I finally googled this after years of wondering why I cough for a half hour after eating Haagen Dazs coffee ice cream. I had always thought it was the milk content.

This book is probably the most informative and practical guide on the subject of acid reflux and heartburn that I have ever read https://tr.im/acidrefluxcauses
I was prescribed Lansoprazole which was brilliant but after two years of aching joints, extreme muscle pain which the doc gave me cortisone jags for, with some research I discovered the drug Lansoprazole was causing these rare side effects but it was I who diagnosed it NOT my doctor, I came off the drug 2 months ago, changed my diet and discovered just eating an apple stops any acid reflux, I eat an apple before bed, brilliant no acid, any time I feel the slightest sign of reflux I simply eat an apple. Apple juice is not that good nor is anything else I have tried including honey at stopping reflux.
