The mormon church agreed to discontinue the practice in 1995.

has the details of the whys and wherefores.
What the church considers salvation is viewed as arrogance by others. It would be nice if the church would get the hell out of other people's lives - and deaths.

Why do Catholics light votive candles? Both are examples of religious practices that focus on the spirtual well being of others. Would you object if someone lit a candle for you?
The final passages of the Old Testament in Malachi 4:
5 ¶ Behold, I will send you Elijah the prophet before the coming of the great and dreadful day of the LORD:
6 And he shall turn the heart of the fathers to the children, and the heart of the children to their fathers, lest I come and smite the earth with a curse.
This is what is meant by "the Spirit of Elijah". We are not only to find our path to salvation, but to open the path to those who died without a knowledge of the Gospel.
Peter wrote that Christ went to minister to the dead. Why would he have gone to them unless they had a means to accept the odinances of the Gospel: 18 For Christ also hath once suffered for sins, the just for the unjust, that he might bring us to God, being put to death in the flesh, but quickened by the Spirit:
19 By which also he went and preached unto the spirits in prison;
Although the Church has a First Amendment right to do what ever it wants. It has a responsibility to be sensitive to the families who do not wish to have this done. Accordingly it removed these names from the records and instructed members to perform the ordinances only for direct family members if they were alive in the past century.

I understand that it is possible (from a Mormon point of view) to become a Mormon and be yanked out of Hell and sent to Heaven even after death. It isn't my place to comment on this practice, and I can't vouch for the idea that God honors such an act.
I have not heard of any Holocaust families allowing their loved ones to become Mormons posthumously, and frankly I would be very surprised if they did.

Are you referring to the Morman practice of baptizing the dead? If so, here is the definition of it:
LDS belief is that the practice of performing baptism for the dead allows this saving ordinance to be offered to those who have died without accepting or knowing Jesus Christ or his gospel during their mortal lives. It is believed that this is the method by which all who have lived upon the Earth will have the opportunity to receive this ordinance and to enter the Kingdom of God. LDS teaching states that those in the afterlife who have been baptized by proxy are free to accept or reject the ordinance done on their behalf. Baptism on behalf of a deceased individual is not binding if that individual chooses to reject it in the afterlife.
I found this on Wikipedia.

Post humerus
Mormons keep extensive genealogical records and, contrary to scripture, baptize for the dead.

Look up the definition of "Posthumous"...
posthumous |Ëpäs ch ÉmÉs; pästË(h)yoÅmÉs| adjective occurring, awarded, or appearing after the death of the originator : he was awarded a posthumous Military Cross | a posthumous collection of his articles. • (of a child) born after the death of its father.
*Edit:
Holy crap! Mormons can do that?! They can actually DRAFT dead people into their religion?!

Not really... We believe it gives them the opportunity to accept the proxy baptism or not.
So it's up to them.
And besides, it's not like we count them towards our member count anyways.
