I would do it right after dinner if they have the room. Then I'd have them do the dishes for you because you were nice enough to make dessert! :o) (on another note, at Thanksgiving, I usually serve dessert after the dinner dishes are done)

I only got dessert after I had finished everything, asked to be excused, and picked up everyone's plates and took them to the sink. Then I could have dessert. It was probably about 20-25 minutes after everybody had finished eating.

I'd say about 60 mins. That way they won't leave tons of room for dessert every night.
