Lives in water, not a fish, i don't think it swims; has pincers(claws?). To cook them, you gotta throw them in boiling water while they're still alive; then they turn red. Usually they can be green, brown, blue-ish...

Lobster if they are in the sea, crayfish in sweet water (though I don't think crayfish change colour.
And you kill them beforehand by a cut under their second segment, if you are a humane human.
