Here is my mother and my personal fried chicken cutlet recipe (it tastes fantastic - give it a try if you get the chance!)
You will need:
- 2 eggs
- Italian Bread Crumbs
- Paprika
- Garlic
- Salt & Pepper
- Oil
Just crack the eggs into a bowl, and mix them up. Then add paprika (about 3-4 sprinkles worth - the eggs should be coated with light paprika flakes), salt & pepper and crushed garlic.
After this take the Italian bread crumbs and scatter them on a seperate plate. Heat the pan to medium and lightly coat it in oil.
Just dip the chicken cutlets/breasts into the bowl mixture and then coat it with the bread crumbs. After this stick it in the pan for about 25 minutes and let the oil soak into the chicken.
This works really really well with some mashed potatos and it's been a hit with my husband and friends!
With the mashed potatos -> I usually throw some milk, butter and freshly crushed Dill. This gives them a wonderfully distinct flavor (Polish style!).
You can also use flour as well as Italian breadcrumbs for more texture, but this recipe will work well without it. :)

Fried chicken isn't that difficult.
First, you must get a vegetable oil that will hold some heat. Canola oil will do just fine.
Then, you must season and flour or bread the chicken.
Take chicken pieces that are kind of small, like breasts cut into quarters (breast halves cut across) and legs separated into drumsticks and thigh pieces. Then wash them off, pat them dry, and put a little 'blanket' of pepper, onion powder, garlic powder, and seasoned salt on them, on all sides.
Then, dip them in a mixture of beaten egg and milk, and then in flour mixed with breadcrumbs. Dip them in the milk/egg mix again, season them again, and dredge them in the flour/breadcrumbs mix.
Heat the oil in a big, heavy frying pan, or an electric fryer. When the oil is hot, about 5 minutes, carefully place one layer of chicken pieces in there. Turn the heat to medium, and fry for 10 minutes (or five per side, if you need to turn them over) until the chicken is done and a pretty brown.
This whole thing will take you a half hour to prepare and another half hour to cook, if you're working on one chicken.

well, too late, couldnt help, your hubby may have stretched your nose already. But for next time, here is how you do it: marinate the chicken with pepper and garlic. Put the pan on fire and let it heat up with olive oil in it. Cut the chicken in small or large pieces, then throw them into the pan. Steer occasionally. Taste when it is oool.
That is basically how all fried things are fried.
If you add sliced cucumber, green peppers and carrotts, it becomes Chinese food. They call it gongibow, i think.

For chickenlegs I usually throw them in a hot pan with some oil and fry for 30 minutes on a moderate gas... a little lower if it splutters too hard.. I flip them every 5 minutes or so, more if the gas is high, less if low. had them tonight actually. delicious! Egg is possible, then through the flower. egg is meant to stick the flower on the chicken. then fry. make sure yr pan is hot!

dip the chicken in egg, then bread crumbs or crackers or flour will work too, but I like a cruncher batter, then put in in a skillet with oil (maybe a 1/4 inch) on med to med high
when it gets brown (5 minutes or so), flip it
Oh, and you can do a double batter, I haven't had as much luck with that, though - egg - flour - egg - cracker/breadcrumbs (oh, and add a little (pizza) Parmesan cheese to the batter if you like that)

egg and crackers !!! :) that works the best ... or you can also get fansy and use the shake and bake or mix some of it to give it some flavour!!!
