I would suggest night fishing for the catfish. Eels can be caught almost anytime of the day. Carp are easiest to catch in the morning times unless they are spawning, then you can catch them almost all day long.
The best time of year to catch big carp is during spring. Like many other fish species, carp move to warmer water during early spring. And just like other species, the biggest fish in the system usually are the first to move into shallow black-bottom bays in lakes, reservoirs, and river backwater areas. In northern waters, this migration sometimes begins before the ice leaves the main lake.
Unlike pike and bass, which might hold in one area in the back of shallow bays, carp are almost constantly on the move. They cruise through the shallows looking for immature insects, aquatic worms, and other invertebrates. It takes a big volume of such a diet to sustain a 40-pound fish. Carp continue to cruise during summer, but usually aren't as visible.
In fact, the best way to find carp during early spring is to cruise through shallow bays in a boat or walk along the shoreline. A pair of polarized sunglasses helps to spot fish moving just beneath the surface, occasionally tailing as they pluck edible bits from the bottom. Structural features like points and inside turns tend to concentrate the fish as they cruise the perimeter of the bay.
Spawning season is peak time to catch many game fish, but when catfish are considered, it's a different story. The spawning habits of catfish differ greatly from those of other game fish, and fishing success may take a nosedive when blues, flatheads and channel cats are on their nests. Unless you understand why this occurs, you're likely to return from a late-spring or early-summer fishing trip frustrated and perplexed.All of our major catfish species spawn during spring or summer when the water warms to an optimal temperature. Channel and blue catfish spawn at 70 to 84 degrees, but 80 to 81 degrees is considered best. Flatheads spawn at 66 to 75 degrees.
The American eel is considered a freshwater fish, though catadromous - it matures in fresh or brackish water and reproduces in saltwater. The species is highly migratory with multiple habitat requirements including the open ocean, coasts and estuaries, rivers and streams, lakes, and ponds.

carp and cats anytime of day but I do enjoy my night fishing for cats! Eel are best caught in low light conditions!

For cats i like to go REALLY early at like 5:30 or 6 A.M. and fish with sum chicken livers on a treble hook with a big juicy night crawler on it.
