Here goes my challange:
"Do not let the cat out" =
"No dejes salir al gato"
“Que no se salga el gato”
"Do not prop the gate open" =
"No sostengas la puerta abierta"
I know some people said "portón" instead of "puerta", but it's because they are from other Spanish countries. But the most popular is “puerta”.

Most of these translations say "Don't leave the gate open" but he wants to say "Do not PROP the gate open". Hmmm, not sure how to say "prop" in Spanish.

No, it is "Estoy feliz que finalmente usted viene a visitarme en Mallorca!" Or "estoy feliz que finalmente usted me va a visitar en Mallorca!" But I learn your different query, and considering you're addressing your pal as 'tu' for your letter, you do not use 'usted.' So it is "Estoy feliz que finalmente vienes a visitarme en Mallorca!"

No dejes salir al gato.
No dejes la puerta de la verja abierta. (in Spain)
I guess in other countries it is called portón.

That means:
"No dejes que salga el gato" or "No permitas que salga el gato"
"No dejes el portón abierto"
