Sizzled Chicken Schnitzel
chicken breast
1/2c. flour
1tsp. dried basil
1c. plain dry bread crumbs
1/2tsp. salt
1/2tsp. pepper
olive oil
1 large egg
Combine flour, basil, salt, and pepper in large zipper-top plastic bag. Place chicken breast, one at a time, between 2 sheets of wax paper or plastic wrap. Pound breasts with several whacks of a meat mallet to thin them evenly to a thickness of about 1/2 inch. Peel off the paper and add the breasts to the bag with the flour mixture. shake well to coat. heat the oil in a 12 inch non-stick skillet over medium-high heat. Meanwhile, spread bread crumbs on a plate and beat the egg in a small bowl usuing a whisk or fork. Dip chicken, one at a time, first into the egg and then into the bread crumbs to coat on both sides, shaking off excess crumbs. Add breasts to skillet as you coat them. Cook breasts until chicken is cooked through with a golden brown crust, 3-4 minutes on each side. If crumb coating begins to over brown, reduce the heat to medium. Place each breast on a serving plate and serve.

If you have some ground beef and hamburger buns, you can make yourself some burgers. Just roll and mold the beef into patties then put them on the frying pan and if want to, put cheese on them while they cook so it'll melt. I;ve done it before, it's quick and rewarding...if you know what your doing that is!:-)
