This one requires no cooking!
Ingredients:
1 store-bought Angel Food Cake
1 (8 ounce) package of cream cheese (softened)
1 can of condensed milk
1 (8 ounce) container of Cool Whip
Blueberries or chopped strawberries or both
Directions:
Very Important: WASH YOUR HANDS! Now, tear the angel food cake into small pieces and put into a large bowl. Add condensed milk and cream cheese. Mix it all together with your hands very well until it's all blended together. Press the mixture into the bottom of a casserole dish (probably a 2 quart or 9X13 inch dish). Spread Cool Whip over the top of this mixture! (YES, the WHOLE container!) Top with strawberries or blueberries. Refrigerate until it's time to serve it!
This is a great summertime dessert!

Peaches 'N Wine
This simple yet tasty dessert is from the May 2007 Cheers 2 Wine Newsletter at this site:http://www.cheers2wine.com/wine-newsletter.html
12 ripe peaches
4 cups Asti Spumante wine
1 cup sugar
1. Fill a large pot with water and bring to a boil.
2. Gently drop 2 peaches at a time into the boiling water for 5 seconds. Remove with a slotted spoon. Let cool, then peel off the skins.
3. Cut the peaches in half and discard the seeds.
4. Combine wine and sugar in a glass bowl. Stir until the sugar is dissolved.
5. Slice peaches and place in wine. Chill for one hour before serving.
This will serve 12

This is a yummy summer dessert I just served for Memorial Day. Even the pickiest of the children liked it.
Light Lemon Ice Cream Pie
1 pint light vanilla ice cream
1 container light Cool Whip - thawed
1 6 oz. can frozen lemonade - thawed
graham cracker crust
zest of one lemon
soften the ice cream, mix it with the cool whip, then pour in the lemonade. Stir it all up and pour into a graham cracker crust. Top with lemon zest, if desired. Freeze for several hours

This is super simple and pretty and delicious
Pistachio Pie
1 Keebler graham crust
1 pkg pistachio pudding mix
1 can (about 15 oz.) crushed pineapple, slightly drained
1 tub of Cool Whip
Dump the pineapple and mix into a bowl, stir, and let sit for 10 minutes. Fold in the Cool Whip. Dump it into the crust and refrigerate it for 4 hours or more.
It's so light and fluffy and good.

EASY CHOCOLATE DESSERT
1 c. flour
1/2 c. butter
1/2 c. chopped nuts
Blend and spread into 9 x 13 inch pan with a fork and bake at 350 degrees for 15 minutes.
1 (8 oz.) pkg. Cool Whip
1 c. powdered sugar
1 (8 oz.) pkg. cream cheese
Blend together and add the 1 cup of Cool whip.
Mix:
2 sm. pkgs. instant pudding (chocolate)
3 c. milk
1 tsp. vanilla
Spread over cheese layer. Top with remainder of Cool Whip. Sprinkle top with more nuts. This will keep in the refrigerator for several days.

Some of the best desserts don't require any 'cooking' at all ... but if you want to have something that 'looks really good' as well as is 'tasty' and 'low calorie' then try getting a 'melon baller' and making two or three kinds of 'melon balls' that you can mix up and 'freeze' in 'dessert dishes' and take out and 'dress them up' with a sprig of mint leaves ... and if you want, you can add some 'topping' of a fruit-flavored or 'plain but sweetened' yogurt.

Pineapple upside down cake----anybody can make that. You just go get a box of yellow cake mix, can diced or crushed pineapple, butter and some brown sugar. Melt a half a stick of butter in the bottom of your cake pan then sprinkle the brown sugar on the top enough to cove the butter but not soke it all up then drain your pineapple and put on top of the brown sugar, then make your cake mix and pour over the top of the mix in the pan bake according to the box. Let it cool and flip it over out of the pan you may put some cherry's on top if you'd like.

Blueberry Dump Cake
INGREDIENTS
1 (18.5 ounce) package yellow cake mix
4 cups fresh blueberries
1/2 cup white sugar
1/2 cup butter, melted
1 teaspoon ground cinnamon
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Mix berries, sugar, and cinnamon in the bottom of a 9 x 13 inch pan. Cover berries with dry cake mix. Pour butter over cake mix, do not stir.
Bake for 30 minutes, or until light brown. Serve warm or cold. top with ice cream.

heres another that takes a little longer to bake but is very simple to put together.
Fruit Cobbler
INGREDIENTS
4 tablespoons butter
3/4 cup all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
1 tablespoon sugar
DIRECTIONS
Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

PHILADELPHIA Strawberry Mousse
Prep Time: 15 min
Total Time: 1 hr 15 min
Makes: 8 servings
1 cup boiling water
1 pkg. (4-serving size) JELL-O Brand Strawberry or Strawberry-Banana Flavor Sugar Free Low Calorie Gelatin
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, softened
1 tsp. vanilla
2 cups thawed COOL WHIP LITE Whipped Topping
2/3 cup chopped strawberries
STIR boiling water into gelatin in small bowl at least 2 minutes until completely dissolved.
BEAT Neufchatel cheese and vanilla in large bowl with electric mixer on low speed until well blended. Gradually add gelatin, beating until well blended. Gently stir in whipped topping and strawberries.
SPOON evenly into 8 custard cups or dessert dishes. Refrigerate at least 1 hour or until firm.

Simple Strawberry MousseTry Cooking Light!
Ingredients
2 cups quartered strawberries
3 tablespoons sugar
1/2 cup low-fat sour cream
1 1/2 cups frozen reduced-calorie whipped topping, thawed
Preparation
Combine the strawberries and sugar in a blender, and process until smooth. Combine strawberry puree and sour cream in a large bowl, stirring well with a whisk. Fold whipped topping into strawberry mixture. Spoon into 6 (6-ounce) custard cups. Cover and freeze 4 hours or until firm.
