we only think he knows everything because we need to have someone who knows everything.

Not an assumption at all. God exists outside of time. Since this is so, He knows everything that has happened, is happening, and will happen, all at the same "time". To God, time is like a book that is open to every single page every single moment and He is completely aware of every single event (not matter how minuscule) all the time. He doesn't have to read the Book of Time, He wrote it, and it's open to every single page to Him all the time, so He knows everything, including what doesn't fit within the book.

The question implies that there was a "time" when God did not know everything. However, God is infinite. God always was and always will be. God is all-knowing from all eternity, that is, there never was a "time" when God did not know everything. "Time" is an inappropriate word, but it is the best we have: God is not IN time; He is in eternity and time is part of His creation. Since God is the Supreme Being and the Creator of all, there never was a "time" when God did not know whatever there is to be known.

God is intimately involved in every aspect of keeping the universe from disintegrating - were it not for His power, even the very atoms which compose matter would not hold together since the nucleus of every atom except hydrogen is composed of multiple positively charged protons. They would all fly apart were it not for the strong nuclear force, which I believe to be the power of God.

Furthermore, God is outside of time and space, and it is from this "vantage point" that He views all things - from the eternal "now" perspective, all time and all events are happening at once, and in His perfect wisdom and understanding, He comprehends and sees them all.
